I've been in love with swords and staves since I was a child (thanks TMNT and Money Magic!)

Ive quite the collection now, ranging from talwar, katana, sabres, machete (bolo etc), as well as long and short knives.

Training in Arnis has given me a strong appreciation for single handed blades as well as short and long stick training.
My limited training in kobudo also opened me up to sai, kama and nunchaku.

I really enjoy the san-setsu-kon, or 3 section staff. Its just a really fun tool to train with.

I have used quite a few weapons so I definitely have some opinions here. My favorite weapon depends on how you define "favorite". So I will answer the question a few different ways.

The weapon I like the most:
Nunchaku. It's fast and very flashy. It also takes a lot of practice and control to use properly so I take great pride in being able to wield it.

My most preferred weapon in a fight:
Spear or Bo. Long enough to be used very defensively as well as offensively. Can counter most hand held weapons.

The weapon I would most like to train with:
Sansetsukan. Very cool weapon here. it can be used as a single unit or as multiple weapons at once. I didn't realize this before but I probably like it because it's a combination of the first two weapons I mentioned. Again, very cool.

I like the Nunchaku, I have two pairs, oak octagonal with cord tie. I find the Sai most versatile and I am looking for a good set of Tonfa. The problem in the UK is that the law is very paranoid about weapons; not just carrying them in public but even owning them in your house or on your property. It has been known for a police officer to confiscate even the most simple blade that is by the letter of the law legal to carry. Most officers have no idea what the law is. I carry an oak kubotan, I took it into a Government Building, it went through the scanner and the security officer handed it back to me, he didn't even blink. The problem is the phenomenon that the police can caution you on a suspicion of intent to cause harm. In theory, they can implement this even when you are unarmed. How they can justify holding you under suspicion by what you are thinking before you act in any way is beyond me. The British Police are known for their paranoia and over reaction. If you wave at them, they wave back.

I've done a couple of basic Bo, Sai, sword (Katana/Bokken) and knife courses. Not sure which one is my favourite though

Yes, very cool. I've used every weapon and every kata within the Shindokan syllabus, and the options are fun and revealing.

I would love to study sword in the Leichtenhauer. lineage. Adding the shield would be fun as well.

Aside from that, I'd like to be able to learn stick fighting, Escrima or Arnis of some kind.
